Although the Central Goldfields has long been celebrated for its prospecting opportunities, tourists visiting Talbot will soon be able to fossick around for something far more nourishing.

The town’s popular heritage building, London House, is set to make room for a new cafe — Fossickers Fine Food and Eatery, which is expected to open its door to diners in June this year.

Headed by Talbot residents, Greg Stevens and Felicity Martin, the venture, as described by the couple, is looking to be a “food experience that will welcome visitors and locals, showcasing the incredible local artisanal produce from the region”.

Ms Martin said the eatery’s location, inside London House, amongst the heritage facade of Scandinavian Crescent and the neighbouring community garden, was remarkable.

“Talbot is such a unique town that has kept its beautiful historic buildings and reminds us of times gone by,” she said.

“We are nestled between two UNESCO Creative Cities — Bendigo, a creative region of gastronomy and Ballarat, a creative city of craft which we intend to share with people in a relaxed and creative setting.”

This close proximity to other noteworthy towns will also be reflected in the cafe’s menu.

It will feature coffee from Kyneton suppliers, share plates and charcuterie boards with meats from Kilmore, cheeses from Castlemaine, desserts from Maldon and a selection of beverages from around the region.

“The name of the new business is to reflect the history of the region and hopefully inspire a place for exploration, dreaming, tasting, rummaging and treading softly,” Mr Stevens said.

“The region is so blessed with incredible artisanal producers who are developing their products using ethical and sustainable methods and we hope to share not just their food and wine, but their important stories of innovation and passion.”

Together, the pair who moved to the town six years ago, want to work towards making the space a “creative foodie hub, where visitors and locals can enjoy a unique experience that celebrates the region’s small producers and creatives.”

Fossickers Fine Food and Eatery will be a welcome addition to the town, according to Graham Miller from Talbot Action Inc — the community organisation responsible for the management of London House.

“This is a fantastic new direction for the community-restored London House heritage building and it will continue to provide for London House’s long-term future as a valuable community meeting space,” he said.

“We are very excited about the future of Talbot.”
